I scored some lamb shoulder yesterday, about 5lbs of 20-30% fatty meat in the end for about $14 Canadian! I was gonna go back and buy more today but alas the sale had ended.
I'm in the process of prepping everything to make merguez sausages but was planning on putting some aside for burgers. Kneaded some dough that I've now got proofing for the buns, but I need a burger recipe for the patty. Suggestions guys?
Thus far I have the homemade buns, a homemade harissa mayo, and a good amount of goat's cheese and caramalized onions to go on the burger, just not sure what should go in. With beef I usually keep it very simple, a little smoked paprika, some ground bacon and beef mix, and s&p before grilling but I think the lamb will require a little more to it. Correct me if I'm wrong, never done homemade lamb burgers before.
