No more sausage making.....surely not!

Any one else facing this dilemma? Last month my OH had a heart attack while we were in France and a subsequent cardiac arrest. Thanks to the excellence of the French health service he is still with us and doing well. This is someone who plays sport, cycles 100 miles, no problem, and climbed the Alps this summer, but has an inherited tendency to high cholesterol. Now, sausages and all the other stuff I like to make aren't cholesterol friendly, so I made up a batch of low fat sausages. They are OK for a sausage casserole, but not the greatest on their own. Bacon is OK, I can take the fat off it, but I think cheese will be out. Any of you have this problem, if so I would be grateful for some ideas for a way forward?
