Hi! I've just signed up and am looking forward to making my own sausages. My wife and I have just bought a Kenwood chef as a joint Christmas present to ourselves and a friend (my best man at our wedding) has recently taken on a council farm to rear pigs for his hog roast business, so it seems rude not to have a go!

Hi Paul, In the UK some (most?) rural councils own farm land which they rent out to tenants to grow livestock and crops. The idea is to give people a start in farming and has been happening for over 100 years and became really popular after the 1st world war with returning troops needing a livelihood. A lot of council farms have been sold off in recent years but there are still quite a few around us in Cambridgeshire.

Well, the Kenwood chef was unwrapped on christmas day and has been put to good use kneading a load of bread, mixing pastry and liquidising soup! I've ordered the grinder/stuffing attachment which should be here tomorrow.

On the not-so-good news front I popped into the butchers in town and asked if they could sell me some casings (as well as some pork, my friend has sold out over Xmas) which was met with a definite 'no'. I've not been keen on them since they opened a couple of years ago- the plastic hams hanging behind the counter put me off! The butchers in the next village was still shut for Xmas, so I've just ordered some online.

Hi Gus, do you happen to buy casings locally?

We made our first batch today. (which split because I think I filled them too much)

the casings were bought from the local butcher who looked at my OH like she was an alien and said something like" never been asked for them before" but fair play he sorted us out for a couple of quid.

The pork alas was from a supermarket which was much cheaper.

the sausages are really nice but we put too much of the seasoning in, well it is our first time.
