What is the most suitable size netting for salamis and whole muscle stuff?

I use #14 for salami in beef middles (#12 was recommended but I couldn't find locally) and #18 for coppa but #16 could have sufficed but not available locally. There are charts online. http://www.malabarsuperspice.com/equip_netting.htm

In my experience, in the UK, the choice is somewhat limited. Unless things have changed, you'll be lucky to find netting for other than the larger diameter products.

That said, I've not looked at this for some time.
