Weekend plans

What's everybody smoking/curing/charcutering this weekend?

Last night I cubed and salted #38 (17kg) of pork & venison to grind, stuff and smoke this weekend. And since it always takes a while to stuff and pellicle before you're ready to smoke I've got a #5 porkstrami resting in the fridge to go on first. I've got a big American football party coming up in a few weeks so hopefully everyone enjoys. Now as long as it doesn't rain/snow all day....

Case and start drying a coppa and a lomo then start curing a loin to make maple bacon chops. :D Also make rye bread and brew a pale ale.

I have 4 pork tenderloins that need to be smoked before going into the curing chamber.
I need to make a fresh batch of breakfast plumps....we're all out.

Making two cheeses this weekend....a Caerphilly and a Lancashire.

I've thought before that it would be neat to make cheese. But I already have so many hobbies that most of them already don't get the attention they deserve so I can't justify adding another one...
