I can't wait to use my new toy

Sure, I don't make enough sausage (yet) to NEED a bigger grinder, but bigger is better and shiny is nice too. Now I just have to empty the freezer to make room for a lot of new experiments. I went for the LEM #12 to replace my #8. I might have to leave it on display on the counter as a stainless work of art 8)

I can't help but feel like Crocodile Dundee: You call that a knife?!? THIS is a knife.

Nice grinder, it looks as if it'll be easy to clean.. A width of 600px seems to work for pictures:

My biggest problem is that I still consider the hand made sausages to be a delicacy so I tend to save them for an occasional treat instead of being a staple of the diet. I need to look at it more from the perspective of "once these are gone I get to try something new so I had better eat up."

(I think the photo problem may be that it was originally on my cell so it was widescreen and in resizing I chose a poor W:H ratio)

Monday morning sausage breakfast. :D It's the start of another work week so it might as well begin well. I've made a lot of friends and fans by giving away sausage and bacon but I do understand the saving for a special occasion instinct as well. My brother calls my storage freezer downstairs "The Magical Freezer of Meat." Whatever you want, Paul can reach in there and pull it out.

WOW! For anybody looking for a great machine I have no reservations about recommending the LEM Mighty Bite series. Granted the #12 is bigger than I need, but it is truly a joy to use. I couldn't keep up with it on the 1st grind. My guess would be about 3 minutes to get the 20lb of butt run through and no sinew wrapped up on the shaft. And there was probably less than 1/3cup that stayed in the auger at the end. I just need a bigger kitchen so I can leave the grinder sit until after I'm done stuffing so I only have to clean up once.
