Fun for Three Dollars

This weekend my local grocery store had chicken leg quarters on sale for 37 cents per pound. I bought 6 for about three dollars (2.1 British pounds) about 7.5 pounds of meat (3.4 Kg). I took the meat and fat from the thighs and made 2.5 pounds of chicken sausage. The drumsticks, backs, skin and bones from the thighs gave me two quarts of homemade stock. The cooked meat from the stock making was given to a friend with five dogs to feed. A pleasant Sunday afternoon for three dollars. :D

That's a crackin' deal. What recipe did you use for the sausage?

Oh boy. I'd forgotten about that one. It looks superb. The lemon must make it just that little bit different?

The seasoning is mild because I wanted the chicken flavor to come through. The lemon adds a "citric freshness" to my tastes; it might be good with orange or tangerine zest as well. Thanks for giving me a new idea. :D

I'm not a lover of orange and meat, so I'll stick with the lemon. But don't let that stop you.
