Feira do Porco Alentejano

FYI - the annual 'Feira do Porco Alentejano' in Ourique, Portugal has grown considerably in size over the last few years and now attracts producers form all over Portugal as well as Spain. Some amazing products made by artisan producers from traditionally reared black pigs. The 2017 dates don't appear to be published yet, but is likely to be mid March.

Will try and upload some photos over the next few days, but in the meantime a link to the municipality's page/videoclip.

This one below is rather interesting - the really big ones are about 3 whole loins sewn up together in fat (leaf fat? Or maybe the bit of back fat next to the skin) and left in the smokehouse for three months - if you zoom in you should be able to see the stitch marks. Unfortunately I've forgotten the name of it

Not really sure, but it's in a pig's bladder. In the north of the country they make a sort of haggis , which is what I thought it was, but as it comes from the wrong region I'm not so sure. Didn't have the space to buy one :-(
