Well, it's a few days early, but our company decided to lump our floating holidays together and make it an extra long weekend so in a few hours the prep work starts.
I've got two #10 pork butts, a #9 brisket (they trimmed off the point ), 3 racks of baby back ribs and 2 slabs of spare ribs to be the first large run of the smoker. That should only fill 2 of the 3 shelves, but some of the usual suspects are out of town.
Anybody else have great carnivorous plans for the weekend?
