Happy 4th of July everyone

Well, it's a few days early, but our company decided to lump our floating holidays together and make it an extra long weekend so in a few hours the prep work starts.
I've got two #10 pork butts, a #9 brisket (they trimmed off the point :( ), 3 racks of baby back ribs and 2 slabs of spare ribs to be the first large run of the smoker. That should only fill 2 of the 3 shelves, but some of the usual suspects are out of town.

Anybody else have great carnivorous plans for the weekend? :drool:

Hamburgers and sweet corn for me on the 4th. I might do some pork belly char siu over the weekend as well. I'm planning on brewing a wheat beer with ginger on Saturday; should be great for Summer. :D We'll need a picture of the smoker in action too.
Fashionably late will be stylishly hungry.

Well, the ribs and brisket turned out great. The shoulders I picked up were boneless (whoops) so I tied them to keep them from flattening. Which made them thicker than normal so I should have put them on earlier. They didn't get tender enough to be able to pull them so I had to slice them. Oh well, that's why this was a test run. :wink:
And just think, I have a whole other shelf I could put in...
