Buffalo bresaola

i just returned from a 3,000 mile round trip drive to nebraska for a family reunion. on the way back, we happened through sturgis. i was thinking that i should get a cut of meat from a local butcher and stopped here. i ended up getting 4.7lbs of buffalo. it's a boneless rib eye and it has a nice 3 or 4 inch muscle running through the middle i plan to make a bresaola with, and i think the trimmings will be made into a landjager sausage.

That's one heck of a trip - but when you look at it on a map of the US it's only a couple or three states. The scale of your country is amazing.

Is buffalo like beef?

Is Sturgis where they have the bike rallies? Or, is there another?

yes buffalo is like beef only more lean and it has a more rich flavor.

yes the one and only sturgis where thousands of bikers meet. i was amazed to see so many bikers on the highway in montana, wyoming, south dakota and nebraska, riding without helmets or any kind of protective gear. i ride and i would never think of riding on the highway without a helmet or protective gear.

man that sucks! i was hit by a car in april. the guy changed lanes without looking. totaled my bike and fractured three bones in my foot. also sprained 2 fingers in my left hand and a lot of bumps and bruises. still dealing with a lot of pain three months later. i will also never wear anything less than a full face helmet, when i went down i did a 30mph face plant on the pavement. it would have been very ugly if i had been wearing an open face or half helmet.

Helmets have been law over here for many years - they save lives.
