Back making Sausage again

Hi all,
It's been a few years but I'm back to making sausages again. I dug out my grinder and stuffer from the garage, cleaned out the spiders and cobwebs and made some standard pork and cumberlands. They were amazing, I'd forgoten how good homemade sausage can be.Got some Droewors drying in the biltong box now .I used new rusk for the sausages (not the Droewors) but still have a massive bag of some that's 3 years old, is this OK to use or should I just bin it to be safe???
