Back making Sausage again

Hi all,
It's been a few years but I'm back to making sausages again. I dug out my grinder and stuffer from the garage, cleaned out the spiders and cobwebs and made some standard pork and cumberlands. They were amazing, I'd forgoten how good homemade sausage can be.Got some Droewors drying in the biltong box now :drool: :drool: .I used new rusk for the sausages (not the Droewors) but still have a massive bag of some that's 3 years old, is this OK to use or should I just bin it to be safe???

I'd bet the rusk would taste stale by now. Glad you're back. :D

Probably depends on how it's been stored - if in vac packed bags in the freezer it could be OK. Won't do any harm to taste it in any case as you'll soon pick up any off flavours, but I'd also have a very close look at it in case it's got mites in it. Personally if it didn't taste rank I'd mix it with seeds and dripping, turn it into fat balls, feed it to the birds and buy fresh for personal consumption.
