Bone in Pork picnic shoulder

Today my local supermarket was selling bone in picnic shoulder for $0.98 a pound, i bought a pack which weighs just over 9 lbs.
My question is what would be the best way to use this? Hope to get a Coppa, will look on youtube on how to do that, but the remainder, just use as regular pork or is there any other special cut i can gather?

Thee are a few different cuts to a shoulder, some don't have the coppa attached. As for the rest I'd make sausage or slow smoke it like a butt.

Wrong side for the Coppa ~~ you need the Boston butt for this

Dang, oh well, i have a lot of sausage meat then.

I just looked and read exactly what iv bought, its sealed in a bag and says it has Potasium Lactate Sodium Phosphate, Salt, Sodium Diacetate :shock:

What the heck did i buy?

Sounds like an "enhanced" chunk of pork. In other words, things added to help retain water during the cooking process, and to increase the weight of the raw product.'
I think it will make a nice roast, but not a good sausage.

Yes Dan, i think your right, i found it on the net, oh well, roast pork dinner 1 day this week, going to find a "boston Butt"

I thought the same when I seen the sale but did not buy it . But if you think about it pork is pork.
The reason for this writing is I heard that you can make a prosuitto from that cut. :lol: thats what I heard. 8)

It made a good roast, nothing special but ok for the price. We made some Philippino Lumpia with about 2 Lbs of it, we were careful with the salt and they were just right (wife is from Philippines)

Used this Phil, a lot of Lumpia recipes use a cooked filling, this one dont and that is why there is only 1 spoon of filling in each wrapper, the wrapper cooks quick so not too much filling as it wont be cooked thru. Very authentic. Best cooked from frozen.

Found a shoulder (Butt) boneless, is this ok for a Coppa? For the USA members its from Costco. has "Butt" right on the lable.
