I cannot find a recipe for Diots de Savoie Sausage, anyone able to help?

Real Savoie Diots
The true Savoyard diot can be consumed raw or cooked and has
less than 15% fat.

Ingredients:
lean and fat pork,
salt,
garlic,
pepper,
sugar,
nutmeg,
300mg / kg saltpeter.
best eaten dried

Real Savoie Donkey Meat Diots

to be eaten raw or cooked.

Ingredients:
lean pork,
donkey meat,
salt,
pepper,
sugar,
ground black pepper
black peppercorns
saltpeter,
spices.
