"No Nitrates or Nitrites" Tag

There is a large indoor "farmstand" close to where i live that stocks quite a good selection of Sausage and Salami, went yesterday and bought some Boudain and Andouille sausage.
I also bought a Rosemary Lamb Salami made by the Milan Salami Co from Oakland CA (quite close to me)
big bold letters on package"Natural Uncured" and "No Nitrites or Nitrates Added" then small letters "Except for those naturally occurring in Celery juice powder and sea salt" thought it was very misleading, salami is delicious by the way :D

I think that they do it that way because that's the way that the FDA prescribe.

The bottom line is that nitrate is nitrate is nitrate...period. All this hype is just that if you take it at face value, fortunately more and more people are seeing thru these claims, thus why I think the referenced article above helps to clarify things a bit.
