First of all i would love to say how excited i am to have found this forum, and how much i am looking forward to starting my journey into making cured meats, and eventually smoking meats as well.
I like to make sausages. The sausage, also called "lạp xưởng" is a dish originated from China . The sausage is made from lean meat and grilled tallow mixed with wine and sugar and then stuffed in dry pig intestine to ripen by natural fermentation . The dried sausage is "dry sausage" and not "fresh sausage". Pink or dark chocolate, sweet. Can be stored for a long time.
