Hi All,
I just realised that I have a parma ham hanging in the loft that I have beenmeaning to get down for the last two weeks and check, but I keep forgetting. I'm sure there is nothing wrong with it but after all the initial excitement of doing it I can't believe I have forgotten it!!
I also have 2 big venison Salamis up there stuffed in ox bungs that have been hanging for nearly 3 months. I tested one about 3 weeks ago but it wasn't too good.... Too much wine and still not dried through.
Anyway I really must get up there this evening and check it all out. If I remember the Ham needed a vinigar wash last time as it was developing the white salami mold through hanging next to them.
