aris : what method do you use to fill your casings

aris- i want to make wors but on reading up, it seems that people first grind the meat into mince[ i will use 8mm plate] and then put it through a stuffing machine. will this not make the meat into a pulp like sausage filling. what method do you use to fill your casings. :)

I buy my meat pre-ground from the butcher, then stuff using a Reber sausage stuffer I bought from www.sausagemaking.org. Simple as that.
