If you purchased pig trotters where do you think that they would come from
Front, Back or Both

Well even though pigs have 4 trotters, maybe they only sell the front ones, because they hang them from the back?

Having been born and bred on a plantation, we always had our own pigs, pork etc. but for years now I've been meaning to make my own sausages.

Can you recommend a good English Pork Sausage recipe (excluding veal)? I probably could make my own up, but maybe should start authentic!

you are correct, generally only the front trotters are sold at least to the public and the hind trotters are sold off as "others" as they have typically been cut through the tendons, to take a gambrel for hanging.
