Collagen

Postby robr » Fri Dec 31, 2004 10:39 am

Hi, I have just purchased sausage making equipment and have made a batch of sausages. Could any one please advise if when using collagen casings if these are to be soaked prior to use? Also do you recommend using oil to lubricate the casings when stuffing?

Thanks

Collagen casings

First of all welcome to the forum.

to answer your questions
1) DO NOT soak collagen casings prior to using.

2) If you are referring to adding a very small amount of oil to the end of the stuffing tube/horn. I don't see why you should need to though you could do it if you are having trouble getting the casings onto the stuffing horn. With practice you will get the hang of it, it just takes time.

I stopped using collagen casings years ago as I found them cumbersome to link, and if you just twisted then the inevitably came undone. I now only use natural casings, sheep and hog.

I hope that this is of some use to you

kind regards
