If any of you Blokes are across the pond Stop over at my place for corned beef sandwiches. I'm expecting the Big guy and his Mrs.

I have 3 lean roasts in the brine. I'm trying bottom round instead of the standard brisket to see if the leaner cut can taste as good as the brisket.

If that turns out ok then i will do a lean pastrami as well

I do love the fat though.
