1st Batch of Bangers

Postby Platypus » Thu Feb 24, 2005 5:32 pm

Thought I'd share with you some pictures of my first batch.

These were made using the mincer, stuffer tube, and casings from my new salami making kit from Franco. And Oddley's basic pork sausage recipe.

http://forum.sausagemaking.org/viewtopic.php?t=402.

I'm quite pleased with how easy they were to make and the end results do actually look like sausages :) , but I will have to wait till tomorrow to find out what they taste like...

Yes, very nice indeed.

What cut of meat did you use, and what type of casings? Natural or collagen?

Thanks for all your nice comments. I'm sure that a large part of the success was down to all the hints & tips gleaned from this forum.

We had our first taste of them tonight, for our tea, and everyone liked them. Although I will probably add a bit more seasoning to the next lot just 'cos I like a lot of pepper.

aris - I used a boned and rolled pork shoulder joint which is a bit silly I know, but it was all that the butcher had ready and he is too uncooperative to actually give his customers what they want and will only sell you stuff has has already prepared

The casings were natural - beef runners (smell a bit don't they? :) )

beef runners

Platypus,
are you sure they were beef runners? They look like hog casings...did you buy them as part of a kit?

Yeah, I was thinking the same. Beef runners are much bigger. Perhaps you got the sausage kit instead of the salami kit?

Err....

Dunno what they actually are

But they came with the salami kit I got from you Franco so I just assumed they were beef runners.
