Ingredients:
1 large pork knuckle
Water to cover
� cup vinegar
� cup brown sugar
2 bay leaves
2 cloves garlic, crushed
Black pepper to season
Procedure:
In a large saucepan, boil pork knuckle in water. Simmer until tender. Add vinegar, pepper, bay leaves and garlic. Leave to infuse for 15 minutes. Season with freshly ground black pepper and serve.
It's not eisbein but is part of a filipino recipe. Personally I would just go for a bit of boiled bacon with peas pudding (boiled in muslin with the bacon), boiled spuds and carrots and a drop of brown gravy.
