Are there any good small organic sausage makers out there?

I am looking for a proffessional sausage maker, I have the recipies and need a organic suplier that can source the meat and produce medium amount quantities, perhaps 500 sauasges a week and also pack them into supplied packaging.

Anyone know a really good outfit?
