Apart from Len Poli's site which I already have, does anyone know of any other good sausage recipe sites, or maybe even books. I've picked up loads of recipes to try from here but I like a good look around.
I'm filled with enthusiam now that I have my sausage gun.

I had a peek at about 7 - 8 chorizo recipes on that site and note that none of them mentioned any kind of curing. Very interesting as that is how I intended to use Franco's chorizo mix, as a soft sausage. I may have missed a few that did recommend curing, will have a proper perusal later.

Must admit only ever had a quick gander myself, When I have more time I will ponder. I was thinking of leaving the old curing thing until winter, as it's a bit hot now.
