Hi there everyone,
I am a keen all grain homebrewer who found this site via a link somebody posted on a homebrewing site I frequent. www.aussiehomebrewer.com

I had all but given up on finding a good sausage for the last ten years. Everything I have purchased in the shop was not at all up to standard. My dad was a cook all his life and he used to make his own but then got too old.
Funny thing is it never crossed my mind to make my own till i found this site.
I have just purchased the Kenwood mincer/sausage maker and am looking forward to making some real sausages. I was going to get a Porket but found the Kenwood at a good reduced price in a store here.
Top site here with a lot of information.
Looking forward to a lot of tips from the experts here.

Regards the homebrewing, is it lager you brew or do you brew real ales (bitters etc) as per English recipes. The reason I ask is that my son has emigrated to Oz, married a Werribee girl and now lives in West Footscray, Melbourne. He says he can't find anything that resembles Ale, only different lagers. He also tells me that when you can find ales that they are imported and grossly overpriced. He has found somewhere that sells Guinness but says that it's not quite right and lacking in body.

Anyhow, it's good you are considering making your own sausages. Are the casings easily available where you are? I recall that some time ago on the forum there was a post by someone in Oz who was finding them difficult to source. Another similar post was enquiring as to a recipe for Kranski sausage.

If you can be of assistance in any of these quieries could you please post on this forum, I'm sure it will be appreciated. It will also add to the wealth of knowledge already here.

Hi Paul,
Yes I make plenty of English style beers. All 100% natural and with genuine ingredients. These are as lovingly crafbrewed as the sausages you make :wink: .
I am currently drinking an Oatmeal stout, a Robust porter and an English ordinary bitter as well as a couple of American pale ales. I also make lagers and will be trying some Belgian styles soon.

As for your son. Its true that the well known Aussie beers are shockers. We call it megaswill here. Its like in England I suppose where the big corporations take over as many breweries as they can to put them out of business and then try and make a beer that will offend as few people as possible.

There are specialist bottle shops were you can purchase imported beers from all over the world but its true that they are very expensive.
If he wants to drink quality ale he should consider making his own. Its a fraction of the price to make and not too hard at all.
At www.aussiehomebrewer.com we have a very large online community and there are members from all over Australia. There are even some expats of yours there as well.

Also there are a couple of brewclubs over his side of town.

As far as casing go I only started ringing around last week and found this place here.

Got to admit they sounded expensive at $32. But i really dont know what to pay for them anyway. I was talking to a young lad (probably the youngest apprentice) who could not tell me for sure how much casings you got for that amount.
For all I know it may be a years worth :) .
I'm sure there should be a couple more places around.

Anyway, I will keep you updated re the casings and I hope your son finds some proper beer soon.

Yeah, it sucks like that here in the US too. People have reacted with microbreweries and brewpubs, great stuff, more power to you with the homebrewing. Anyway, welcome gnol.
