Any idea what exactly Veli Sheets are in the following video at about 4:40?
Some type of vellum paper?

I'm very curious.

The video is Canadian.

or perhaps bakers parchment which is silicone impregnated...good question, never seen this technique before, perhaps for insects?

Yeah, I'm thinking that it's some sort of coated paper, but there are so many...it mostly resembles a thin deli paper.

I'm guessing it's to control the rate of drying.

I noticed the meat wasn't left very long in the curing salts, 12 to 15 hours. Is that long enough for the cure to penetrate?

I believe it is a form of Collagen --- not 100% but will make the call tomorrow

You're correct Robert, and collagen makes perfect sense....I got it in my head that it was paper and completely ignored the possibly of collagen!

I found some down in PA.

COLLAGEN SHEETS 20"x22" (51cm x 56cm) 1000/CASE $605.45 :shock:

It's not that bad when you look at the indavidual sheet --- $1.65 :wink:

maybe you might be able to get a discount as being in the trade :lol: then again it's much cheeper than beef caps :(
