Brine injection ?

Where to buy, how to use. Stuffers, casings, spices, grinders, etc.

Brine injection ?

Postby sundodger » Sat Jan 05, 2013 1:08 pm

Only tried dry cure so far & now looking to diversify a bit with brine.
Just a question - Is a hypodermic syringe type injector all I need - Or do I need anything else. Stacks on ebay etc. but any pref. on make, size etc ?

I've found the Masterclass Professional Flavour Injector to be good.

There's a number on ebay. Here's an example:

A good heavy-duty stainless hypo with replaceable rubber gaskets will serve you forever and a day. I wont' touch plastic syringes, they just aren't worth the hassle of one cracking when you're in mid-project.

Those you see on US supply sites look great - regrettably they don't seem that readily available over here.

Slightly cheaper again at Butchers Sundries http://www.butchers-sundries.com/product_info.php?products_id=571
Casings seem a good price too.

I got one last week (along with casings and Stainless Steel Filleting Glove) p&p was free, don't think there's a minumum spend. It's much easier to use than the large medical syringe it replaced.
They also have an eBay shop http://stores.ebay.co.uk/Butchers-Sundries
