I have heard that straight powdered Honey is available as an ingredient, but everything I see for sale has additives it seems.

Anyone know where I can find it unadulterated (if 'powdered honey' can ever be so?!)

Got a couple of new recipes that will need it to come off.

I doubt you are going to find it without some sort of stabilizers, as honey is hygroscopic, it will draw moisture like crazy, and turn a pure dehydrated honey into a solid block without something to stabilize it. Your best bet would probably be to dehydrate and grind it yourself and use it quickly, or store in a vacuum sealed container in the freezer.

Check a Korean market if you have one in your area, they have it at the one by me in 5# bags. I wanted to try it but decided to get some from Butcher&Packer here in the US but was mostly disappointed. It took a solid 1-2 teaspoon scoop to get a really good honey flavor. I haven't had the guts to actually use it in lieu of real honey in curing. Maybe someday.... I could just save it for tea...

dissapointing if its just a kind of sweetener rather than having a real honey profile.

I wouldnt substitute it for real honey in curing but there are a couple of all dry rub recipes that I want to try it in.

PS I can only wish there were Korean Markets in North Devon!
