Commercial Bacon Slicers

Postby mdmafo » Sat Jun 01, 2013 11:35 am

Hello lovely people,

I am looking to buy a commercial meat slicer that will be used heavily making bacon for a new market stall.
I am struggling with the initial costs of getting the business off the ground. So am going to try to save costs and buy a slicer second hand off ebay

I know I need an internal sharpener and am trying to find one around £150-250, I would like a flat bed slicer.

How big should the blades me for larger bellies etc, is 10" enough?

What is automatic feed?

Does anyone have any knowledge of these brands -

Metal Nord

Rheninghaus

Bizerba

I am hesitant to do so but should I take a punt on this one? I have already been stung by to good to be true catering deals on ebay.

I would be forever grateful if for any advice in order not to waste precious funds right now.

thanking you muchly

Their are no problem on that as there are some great buys to be had

I know I need an internal sharpener

A separate sharpener are much better as well as clean/hygienic

and am trying to find one around £150-250,

price is always a big concern when starting out in a business

I would like a flat bed slicer.

believe me; gravity fed are far better

How big should the blades me for larger bellies etc, is 10" enough?

10" in my opinion is on the small side it will do at a pinch but 12" is far better

What is automatic feed?

place the belly/bacon on the carriage, lock it down with the clamp, turn the switch to ' automatic ' then turn on the power switch ~~ carriage will travel back and forth slicing the bacon. Gravity feed is far better for this as there are fewer things to go wrong.

Out of what you have listed there Bizerba is what I would pick ~~~ we have two of them

I have used about every slicer under the sun from the very old 50/60's Berkel automatic (20" blade) to the smaller ones, Hobart and such but I will always go the extra for the Bizerba ~~ why? safety is a biggest thing with these (I have scares from other makes  ), easy to clean (sharpening stones are separate which is a big plus), ease of use

I would be forever grateful if for any advice in order not to waste precious funds right now.

thanking you muchly

I do relies that money is always a point but I will also stress that buy wise and not cheep as is always the temptation, my business partner bought cheep and I bare the scar :( I slice about 200/300kg of bacon each week
