I am trying to set up a butchery shop and need help with what equipment I need, when I look online all I find is the business side of it. I want to know the must have eg chopping block, hooks for age the carcasses on.

Any help would be appreciated,

Hi Gavin, where in the world are you. It may be easier for fellow members to answer your question, plus what will your line of business be - just selling fresh meat or will you be processing sausages, pies, cooked meats etc.
