Where to buy, how to use. Stuffers, casings, spices, grinders, etc.

Anyone have the above or an old manual laying around?
Just bought a second hand machine and want to remove the blade to give it all a good clean, we had one in the shop in the 80's but I cant remember how to remove the blade, guess its clockwise for the brass screw and clockwise again for the bush as the blade runs counter clock but didn't want to risk it.
any help would be appreciated.

Hi TJ, I did and they came back this morning with an old manual.
Stripped the machine, replaced a switch fit new sharpening stones all back together and as good as new.

ps. its counter clockwise to unscrew if it helps anyone else
