I recently bought one of these and 'though I'm no expert it seems to be doing the job. One thing that's a bit annoying is that it doesn't have temperature compensation. If I was buying again I would have a look at this

I ordered the Milwaukee MA920B/1 pH Electrode from the above site after finally getting confirmation that the lutron meter will work with any BNC probe. I'm hoping the info was correct, will update when my probe arrives.

This probe can test the meat/farce directly rather than a slurry can't it?

Yep, so they tell me. I'm anxious to see if it really is as accurate and easy as just spearing into some stuffed casing. Also, I am just starting a tabasco pepper ferment from the ones I grew this summer (frozen up to today) and I could use a functional PH meter to tell me when my ferment is at a safe PH. I'm so excited I can't wait!!! (Yes that WAS sarcasm, lol)

Well took a week for my probe to arrive and I'm happy to say it works perfectly with the Lutron meter! Now to make up some salami so I can try it directly on the meat (after I order some new culture as the one I have, vacuum sealed in the freezer is now almost two years old)
