I buy my pork as a half pig or a whole one totally uncut, so as to make the best use of the beast! My local farmer supplies "ORGANIC, FREE RANGE, RARE BREED BRITISH BLACK PIGS" to me at around � 2.75 a kilo.
I know this may sound expensive compared to the usual high street butchers supplied pork, which is stuffed full of antibiotics from birth, and largely tasteless. This British Black meat, however, is absolutely superb, and the sausages are to die for, as is bacon, petit sale, and gammons made from it.
If anyone is interested in buying some of this pork, let me know, and I will put you in touch with the supplier. It will probably be a matter of waiting a short while for the next available batch going to slaughter, but if its worth having - and it is! - then its worth waiting for!

I agree, the last pig I bought was a Black and was absolutely excellent, well flavoured with a good layer of nice hard fat.
