Hi All

I was wondering how people store their herbs and spices. I am assuming any herbs/spices purchased will be packaged in sealed plastic bags. Once opened the contents should really be placed in air tight containers to maximise there flavour. I would have thought that some sort of wide mouthed bottle would do. Does anybody know any where suitable containers can be purchased.

Jam jars. If you don't intend to use the herb for a few weeks, fill the jar with boiling water, empty it and them wipe it out with a clean tea-towel as fast as you can, then dump the herb into it and screw the lid on. If you do it fast enough you get as good a vacuum seal as the professionals get.

Always store herbs and spices in the dark, and avoid fluctuating (I'm sure that's not spelled right :? ) temperatures, and replace them all every six months.
