Hello mjcoetzee! Is your farmers sausage a family recipe? Making bacon is easier to make than a person would think,once you make some you will not go back to store bought! Best wishes!

I make my sausages with pre-blended spices from ZA which I modify.

I would like to make bacon cause we do not like shops bacon it's too salty normally. I have found only 1 type which was great but can't get it any more. I also like bacon to be smoked, been eyeing the Bradley Smoke Generator on sausagemaking.org.

Hi Michael,
The Bradley is designed for hot smoking, ie smoking while gently cooking, it can be adapted for cold smoking though, if you were thinking of using it for for that. Is the sort of bacon you want to make hot smoked or cold smoked?

Hi saucisson

I want to cold smoke.

I though the Bradley is a cold smoker as the smoking generator is outside the smoking cabinet and that provided the ambient air in the cabinet is cool/cold it will work as such. I specially build a basement in my shed so I can have a low ambient environment.

Alternatively I will just cut a hole in an old working fridge my neighbour gave me and lower the smoking temperature.

You can cold smoke with the Bradley if you make the following modification:

The pellet feeder is external, the 80W element protudes inside the insulated main unit which as Jenny noted with her link, can create problems with too much heat for strictly "cold" smoking. However if your basement is cold enough you may be ok, but as you see there is a way to get around it.
