Where to buy, how to use. Stuffers, casings, spices, grinders, etc.

Does anyone know if the Bradley smoker (which Franco advertises on this site) is big enough to smoke whole hams (on the bone)?
Thanks
Simon

I should think you could get a ham in there but the biggest problem with them especially in the summer is keeping it cold enough for cold smoking as it tends to rise from the smoke generator box even if the cabinet is off.
If you look at the bradley site there are ideas on how to keep it cool

You could almost do two hams. They are about the size of a medium size fridge inside.

Thanks for your replies.. I have had a lood at their website and am very tempted. As you say Wilf they have a good solution to keeping the box cool as well. If I go for it will let you know how I get along.

We weren't sure whether to get one at first but now glad we did, they really are easy to use with great results, Hot controllable smoking is very easy, and the cold just takes a bit of modifying as youve seen from the Bradley Site......Go for it you wont be disappointed if you like smoked foods

Simon,
I use one of these:
http://www.coldsmoker.com/ They are a bit bigger, run cooler and are a hell of a lot cheaper to run than the bradley. Not as high tech but more flexible as they use real wood dust rather than pre-mixed briquettes.
With this one the smoke is passed through a chimney which is surrounded by water (I add ice as well in summer) so if the smoke does get warm it is cooled as it passes through into the upper chamber.

Spuddy,
It looks great but is it big enough for whole hams? (it is difficult to see from the photos as it is cylindrical).

Yes it's big enough. Put it this way I can get 8 or 9 big sides of salmon in it at the same time.
If you hang them right you should be able to get 4 whole hams in there.

Thanks Spuddy: I'm very tempted by the coldsmoker, and the one you suggest looks great.
