DIY Sausage Stuffer 2.00

Postby phillmypintpot » Sat May 28, 2005 2:29 am

Just to let you know of a small scale sausage stuffer i've made. Works quite well and only cost 2.00! :)

Firstly get a mastic gun (1.00 from pound shop).

Secondly get a cartridge of acrylic sealant, or no-nails (1.00 from same shop).

Next evacuate contents of cartridge using mastic gun, now push the plunger part of the cartridge back out of the cartridge using a long drill bit pushed through the nozzle of the cartridge.

Remove any remaining sealant using a damp cloth. Now wash the cartridge & plunger well using plenty of hot soapy water.

Fill the cartridge with your sausage mix, place the plunger in the end, put in mastic gun, place casing on nozzle, start pumping on trigger and away you go.

Refill by removing plunger as above. Clean well after use. Works particularly well with small diameter casings. :)

Don't think I would be happy using anything that has had dodgy chemicals in before hand. How can you be sure all the mastic residue has been removed?

I've been looking for something to do small quantities (i.e. 500g/1lb) when testing new recipes. Any sort of commercial stuffer will have almost that much left in the stuffing tube. I'm still thinking about it, but i'm thinking that the funnel with the end of a wooden spoon method may be the cheapest/easiest. I think the trick here is to find the "right" funnel.

I remember watching a programme once and there was a guy in Italy stuffing sausages by hand. Boy he was quick, it would take some doing but with practice i'm sure you could it could be done.

Hi

I made one of these years ago & I'm still kicking around,
It is a very cheap way of starting & for small test runs, go for it I bet you all drive cars that pump chemicals into the air & have BBQ's burning fossil fuels but you don't think too much about these stop worrying so much or the stress will kill you first.

SAUSAGEMAKERS DO IT WITH MASTIK GUNS

Odleys got me at it now

I'm not so concerned about the harmful chemicals. More that it would maybe taint the flaviour. Trust me i'm not a witterer, I smoke and drink in excess and eat a spoon full of salt petre every morning before I wake up  [/b]

Ahhh Mastic!

The benefits of eating mastic are it makes you mould resistant. Or that's what it says on the tin.

As the acrylic sealant and the no-nails type stuff are miscible with water when wet, if you wash it carefully you should be ok. Also go for one of the translucent tubes.

It aint killed me yet :o :)

Certainly not had any problems with my sausages going mouldy

Seriously tho', use common sense. If the sealant cartridge says "highly toxic" don't use it.

You can buy empty tubes from your local DIY store for this purpose.

Here is a good selection of funnels - though it seems you need to buy quantity, and some of the larger ones are expensive:
