Where to buy, how to use. Stuffers, casings, spices, grinders, etc.

I used to buy superb "Paesano Piccante" and "Paesano Dolce" sausages from a great Italian deli in Edinburgh called Valvona & Crolla. Can't get anything nearly as good here in NZ, so would love a recipe to try. Does anybody have a recipe?
