Grey sludge from mincer

I took my grinder to a local machinest here and he put some nylon bushings in the areas that grey sludge would appear...it turns better now and I have no grey sludge at all. I also switched to a stainless blade and grinder plate. The machinest charged me 20 dollars for the bushings that he made. Well worth it IMO. My sludge problem seems to be behind me.
