Hi Folks,
First time poster here. My new grinder and Rytek Kutas book are set to arrive this coming week. I want to make several varieties of sausage and will be using deer and hopefully moose in the coming months. I would also like to make some pork sausage. I want to know where to buy pork trim in Winnipeg. Also, what is the going rate for it. My local butcher wants $2 a pound and I have to buy a 60lb. case. Something in a smaller amount and cheaper would be nice.

I am not sure what you mean by pork trim, but to make decent sausage I use pork shoulder (boneless picnic or boneless butt). I am not sure why you have to buy 60 lb (unless he dose not normally stock the product)

Boneless picnic cost $1.69 lb so asking $2 for this would be a steal as he ain't making money if it shoulder related.

Belly trim cost (just made the call) $.89 lb so you should be paying $1.39 lb
But what do I know

Look for a Hutterite colony and ask them. I'm in Alberta and they and the Mennonites use the old brood sows for farmer sausage. They should have connections.

You could also go on Kijiji and buy someone's pet potbelly...

I'm in Winnipeg too and am just getting into the weird world of sausagology and am looking for a source for pork fat.
