Hey folks,

I am trying to get my hands on some pigs bladders, i have read various places that say they can be sourced salted but cannot find them. Others suggest simply going to an abattoir.

Any pointers on the best route to sourcing them would be most helpful!

Thanks,

H

There was a thread about pigs bladder football a while ago:

http://forum.sausagemaking.org/viewtopic.php?t=8279&highlight=bladders

which lead to this:

https://listserv.iupui.edu/cgi-bin/wa-iupui.exe?A2=ind9711&L=MORRIS&P=R4471

from a USAnian who is at least on the right continent.

Good luck!

p.s. why?

Thanks onewheeler, i am actually searching on behalf of my Mum who lives just outside of Aberdeen so US sourcing won't help her out much!

She tells me she has a recipe for chicken stuffed in pigs bladder that she wants to try and asked if i could assist in some web searching as she had so far drawn a blank!

Non of the local abattoirs seemed keen to accommodate so i am going through the list of rare breed farmers to see if they might be able to help. Will update if i find anything!

Sounds revolting! How very Scottish! :D

Might be worth contacting the OP in the pigs bladder football thread as he came from Cumbria, which is a bit nearer than USA.

I think that chicken and truffles in a bladder is one of Paul Bocuse's signature dishes.

Thats the one, Poulet de Bresse cuit en vessie. I think Michel Roux did it on TV recently.

(after searching a bit i came up with this http://www.bbc.co.uk/programmes/b018j8fs )

Don't have any at the moment, but am happy to put ypu some aside next time we slaughter. I have tried using them for culatello several times but they tend to split - I suspect culatello is done in a cow bladder rather than pig. But for a chicken dish they should be sufficiently elastic.

Wow! What a site, you have a new devoted blog follower! I will pass on your generous offer to my Mum and get her to contact you directly.

Now to spend the morning avoiding writing the ER i am supposed to be completing to read up on your adventures in meat!

Hi John,

Could you please tell me where you sourced a pigs bladder from in the UK?
