Half price salmon

For those who, like me, wait for salmon to go on offer before curing/smoking/experimenting.....my local Morrisons has fillet on half price at the moment (I presume this is a national offer?).

What salmon is it? IMO Salmo salar is the only "real" salmon and the only one worth its name. Some vendors sell related fish under the name Salmon.

Hi Kev

It is a National offer and is priced at £6.49 a Kg which quite frankly is stupid money! I have bought a side to taste and ok you have to remove the pin bones and ok it dosent taste as good as the grade A slmon but there is nothing wrong with it at all. Tescos sold a similar grade salmon around the Christmas period for £8 a Kg.

Personally I would grab it whilst you can

They're usually Farmed Atlantic Salmon Grisell - I believe that they're they same species that you refer to.

Ok, I was asking because over here there are all kinds of strange fish sold as "lax" (= salmon); "pink lax", "chum lax" etc etc. They're usually terribly inferior to the real stuff.

400 lbs just got delivered next door to us at work, my mate came over to ask if I would like some as he has 300 lbs too much -- and this is fresh and not farmed stuff :lol: :lol: :lol: I see another load of fish pies coming along :D

I was in a Tesco yesterday and they had whole salmon at £5/kg on an offer.

I think I will try and smoke some, need to look for a good cure to make a lox (sp)

For the pies I need someone to drop off 300 lbs each of Halibut, Shrimp and Pollock :roll:

The other thing I need for some kind soul is a few gallons of vermouth to finnish the pie :shock:

As for lox, I just use golden granulated sugar and sea salt before smoking over oak, beech or cherry (if the CSG will burn it - sometimes it will, sometimes it won't). Unfortunately my cure quantities are somewhat smaller than you need but my proportions are generally 3 sugar to 2 salt (by volume).

I need 140 letres :shock: I can do the air fair as I know a fellow who works/ed for air canada $125 round trip it's not what you know it's who you know :wink:
