Soused Anchovies

Just returned from holiday in Puglia, Southern Italy,and the food find of the trip was the soused Anchovies that they serve as part of their antipasti,absolutely delicious.
As fresh anchovies don't seem to be commonly available I'm thinking of using Sardines,which are cheap and easly sourced.
Would apppreciate recipes/comments.

Maybe have a look for a recipe for soused herrings and adapt it?

I've done it with mackerel, but wasn't that impressed with the result. (it's something you'll find in France)

Thanks Phil---that was my first thought as well,just thought somebody may have had an authentic recipe.
Interested in your comment about the mackeral, as I have a freezer full of trout & am thinking of having a go with them.
Will keep you informed of my results.

Have you looked in "immigrant" supermarkets? Frozen anchovies can be found in almost any Turkish/Arab supermarket here for around £3 a kilo. Or must they be fresh, i.e. unfrozen?

Thanks for the input chaps.
The Spanish recipes look great.
I can easily get to Billingsgate fish market from my home (if I can get out of bed at 4am!!) so I should be able to get Anchovies there.
It's just that Sardines are so easily available they seemed an obvious alternative .
