Smoking meat and fish

Postby wallie » Mon Dec 29, 2008 3:27 pm

I am going to smoke some meat for Pastrami also a couple of salmon fillets and maybe some haddock, my question is can I hang them in my smoker and smoke them all together?
Also is it o/k to hot smoke fish?

So, obviously, is hot smoked salmon. It's good, if smoked by an expert.

Hi Wallie

Not wishing you to suck eggs as it were (wonderful smoked by the way) but dont forget to brine your fish before cold smoking.

Funny you should say that WW but I have 2 dozen boiled eggs that have been in the pickle for a month, would it be o/k to smoke some of them?

hi Wallie

Dont see any reason why not.... I tend to boil mine, craze the shell and then smoke - they come out like old marbled eggs, great fun and fantastic taste as well. Garlic and butter I have been smoking a lot of this year as well, not forgetting smoked olive oil..cant see the point myself but I dont half sell a lot.................

Cheers WW

How do you contain the oil to smoke it WW?

I smoke coarse sea salt in a bowl, though it usually needs a good drying afterwards.

Just pop the oil on a tray and place in the smoker. I use a stainless steel 1/1 gastranome.

I'll second the boiled eggs - but I do mine minus the shells. I like the idea of WW's marbled effect, yet another thing to do!
