Morning

I can get hold off Apple wood and maybe pear, and was wondering wether its a good smoking wood ,also would i have to strip the bark and allow to dry out for any period of time :D

Gaz,
Apple and Pear are good for smoking. You can leave the bark on but dry the wood which should not be green. Drying time can be up to a few months.

Pear and Apple are very good...but it does need to dry...
If the wood is to green it won't burn clean and you will be left with bitter tasting food...

I'm not a big fan of bark on the wood...but thats a personal preference

fruit woods are good for smoking once dry. I remove the bark after its been dried the bark tends to add a bitter taste . Be sure the wood hasn't come from a commercial orchard. The amount of spraying of chemicals and pesticides on those trees would leave the wood very polluted IMHO and I wouldn't be using it in my smoker.
