I found myself wanting to smoke a few eels but I was away from home. I found 3 bits of tin. Thats it. You have a smoker. Just bend into shape and put some clay or mud around the edges.
Get your ember base, then put your eels (or whatever) in to cook. With eels, I like to crank the heat a little at the start and when you see them turn insideout, theyre cooked, pull the fire out and just send your smokey flavours up for a couple of hours. ENJOY!
