Smoking Quails Eggs

I have recently got some quail and they are laying well. I am getting a bit fed up with the eggs boiled and dipped in celery salt now :lol:
Any recipes for cold smoking them ??

I did see one for smoking chicken eggs some while back but it was a real time consuming labour of love.

Ratman,
mmmm! quails eggs, you lucky bugger!

Drop eggs into boiling water for 2mins 45secs then immediately plunge into ice bath. Leave in ice water for 10 mins before taking out and drying off. Once fully dry place in cold smoker for 2-3 hours then place, unwrapped, in fridge overnight (they are better after two nights though). This method leaves the yolk sticky and not fully set. Serve with antipasto and fresh mayo.

Alternatively, boil for three minutes then pickle with a few sprigs of tarragon. You can do this smoked or unsmoked.

I cold smoke eggs in a similar way to Ryan but for at least 6 hours (my smoker vents quickly). Smoked Scotch egg - that's Scotch egg made with a smoked egg, not a smoked Scotch egg, is good. Or, you could try what I keep meaning to do: smoked pickled eggs or vice versa....

...or you could send me the eggs and then you'd have more time to go fishing! :lol: :lol: :lol:
