Has anyone tried hot smoking using Ash or Birch wood ? I' ve got a wood pile full of ash, birch and oak and wondering if I can use them.

Thanks

they both will work fine, just be sure to remove the bark on the birch, it will give off a very black smoke that will ruin your meat.
